Crepes with Roasted Apples and Mascarpone Cream

The Inn on First in Napa offers many
scrumptuous
gourmet breakfasts, including these delicious crepes
that are always a treat and very popular with guests.
Says the innkeeper, "The
beauty of this recipe is that the
crepes and apples can be made the day before, which
leaves only the mascarpone cream to make in the
morning."
Ingredients for crepes:
- 6 eggs
- 1 cup flour
- 4 cups milk
Mix eggs and flour into a thick paste. Add milk. Whisk
well until smooth. Strain through a sieve if necessary
to remove lumps. Heat a non-stick sauté pan over
medium heat. Pour in small amount to coat bottom
and sides of pan. Allow the crepe to cook through. As
it pulls away from the sides of the pan, pull it up gently
and turn it over and cook for 1 minute more. Slide out
of pan and place a small piece of parchment paper on
top so that you can create a stack of crepes.
Can be frozen for up to one month, tightly wrapped in
plastic. Makes 30 7" Crepes
Ingredients for roasted apples:
- 20 Granny Smith apples
- 1 cup sugar
- 1 TBS cinnamon
- 1 TBS lemon juice
Peel, core, and cut the apples into small dice. Toss
with sugar and cinnamon. Add lemon juice. Spray
sheet pan with PAM and spread out apples. Bake at
350 degrees for 20-25 minutes, until tender. Remove
from hot sheet pan and spread on a cold sheet pan
to cool quickly. Refrigerate after cooled.
Ingredients for mascarpone cream:
- 2 cups mascarpone cream
- 1 cup whipping cream
- 1 tsp vanilla
- 1/2 cup sugar
Combine ingredients and whisk together until soft
peaks form.
Place 2 to 4 tablespoons of apple in each crepe and
roll into a long cylinder (like an enchilada). Dust filled
crepes with powdered sugar.
Place a dollop of mascarpone cream on each crepe.
Or pipe out a rosette on top with a pastry bag and fluted
tip. If desired, place thin half-moon apple slices on top
and serve with a side of sausage - such as chicken
apple.
[For frozen crepes, thaw overnight in the refrigerator.
To reheat apples, place in pan on stovetop over low
heat. Add a little water to keep the apples moist.
Heat up a sauté pan or griddle, and heat each crepe
for service.]

Spring is here and so is bike season. CABBI is

of the best biking on the peninsula, including coast

tasting rides in Sonoma County. The outdoor hot tubs

out The Lavender Inn in Ojai, located near
the Ojai Valley Trail which connects the center of Ojai
to
Ventura's beach at Seaside Park with a 16.5 mile
walking, equestrian and cycling trail. Mountain, road,
and tandem bikes, joggers, and child trailers are
available for rent.
The MacCallum House Inn in
Mendocino offers its own fleet of rental bikes (not to
mention an on-site manager who used to competitively
race mountain bikes and is a great guide to nearby
trails!)
The Old Yacht Club in Santa
Barbara
offers complimentary use of their bicycles and
equipment so you have a car-less getaway to visit the
beach, zoo, shopping or any other destination in this
very bike-friendly city. (Santa Barbara also has a "Car
Free" package to encourage visitors to take the Amtrak
to the city and be totally car free).
