    Ingredients:

      • 2 TBS olive oil or butter
      • 1 1/2 pounds boneless pork loin, sliced into 1/4 inch medallions
      • all-purpose flour
      • 1 TBS chopped shallot
      • 2 TBS Madagascar (green) peppercorns
      • 1/4 cup brandy
      • 1/2 cup heavy cream
      • 1/4 cup plus 2 TBS beef stock reduction (or beef gravy)
      • 1 TBS Dijon mustard
      • 1/2 stick butter, softened
      • 1 pinch coriander
      • Watercress, for garnish
      • Thinly sliced red bell pepper, for garnish

Flatten pork medallions between sheets of waxed paper with a mallet or the back of a heavy skillet. Heat oil or butter in a skillet over medium heat. Dredge pork in flour and add to skillet. Evenly brown both sides of each pork medallion. Add shallots and peppercorns; cook until shallots are soft.

Add brandy. Carefully light brandy with a long match; cook off alcohol. Add cream and cook until reduced slightly. Stir in beef stock reduction. Stir in mustard, butter and coriander; cook until butter is melted and combined. Remove meat to a serving platter. Reduce sauce to desired consistency. Pour sauce over meat. Garnish with watercress and red bell peppers to serve. Makes 4 to 5 servings.
