    Summer is not over and it's certainly not too late to book a beach vacation and stay at an ocean-side CABBI inn.

    The Central Coast of California has some of the most beautiful and calm beaches and the seaside town of Cayucos is great place to start your adventure. Book your stay at the Cayucos Sunset Inn (at left) and you will be indulged in luxury at this casually elegant inn.     Located across from Moonstone Beach in Cambria on Highway One, Pelican Cove Inn offers two-room suites and rooms, many with full ocean views and balconies or patios.     RANCHERO SAUCE

    • 1 teaspoon sugar
    • 1/2 teaspoon red pepper flakes
    • 1 (16-ounce) can chopped tomatoes, drained
    • 1 (32-ounce) can La Victoria Mild Green Enchilada Sauce
    • 1 (12-ounce) can cooked chicken, drained
    • 1 small can chopped Ortega Chilies, drained
    • 1 teaspoon cumin
    • 2-3 shakes Liquid Smoke
    • Handful tortilla chips, broken but not crushed

    EGGS & FIXIN'S

    • 8 eggs
    • Cheddar jack shredded cheese blend, for serving
    • Sour cream, for serving
    • Scallions, thinly sliced, for serving
    • Flour tortillas

    In a large pot over medium-low heat, caramelize the sugar and red pepper flakes. Add the tomatoes, enchilada sauce, chicken, chilies, cumin and liquid smoke. Simmer sauce for 30 minutes. Just prior to serving, add the chips. Fry two eggs over-easy for each serving. Plate the eggs and top with a ladle of sauce. Top with a handful of cheese, a dollop of sour cream and scallions. Serve with warm tortillas and fresh pineapple.

    The sauce for this recipe freezes well and can easily be doubled or tripled.

    California's National Parks, Monuments and Forests cover lands from the Pacific Ocean to the crest of the Sierra Nevada Mountains. Not up for camping? Book your stay at a CABBI inn nearby and you can retire to comfort after a day in the wilderness.

    Sequoia & Kings Canyon
    These two parks lie side by side in the southern Sierra Nevada range, east of the San Joaquin Valley. Experience the immense mountains, rugged foothills, deep canyons, and some of the world's largest trees.
