'Tis the season to give back and at CABBI we want to showcase a few inns whose hospitality extends far beyond their walls and into their local communities.

Jamul Haven, located outside of San Diego, believes that an inn should be a focal point for the local neighborhood, encouraging a community of spirit - especially during the holidays. On Thanksgiving Day, the inn hosted a free Thanksgiving dinner to members of the military stationed in the area. During December, the inn hosts two parties, a formal dinner for all of their neighbors within one block and a gingerbread making party for all the neighborhood children.

Santa has a few helpers at the Inn at Venice Beach and Sonoma County's Timber Cove Inn. Both these inns are long supporters of the U.S. Marine Corps Toys for Tots program. Guests receive a discount rate for bringing a toy for a needy child.

Re-decorating for a cause is the latest venture at La Casa del Camino. The CASA Surf project and suites brings some of the most popular surf and skate companies to design suites at this popular Southern California spot. Look for rooms by Roxy, Billabong and Quicksilver to name a few. A portion of the proceeds from each room will be donated to charity during the first year.

The Gerstle Park Inn is a quiet and secluded inn that offers luxury and relaxation. Guests can enjoy private decks, down comforters and fine linens. The location in Marin County - close to the wine country and the many sights of San Francisco.

This recipe is a favorite from the inn's breakfast menu.

INGREDIENTS

• 2-3 sliced mushrooms
• 2 tablespoons sliced zucchini
• 2 tablespoons chopped red bell pepper
• 1 tablespoon chopped red onion
• 2 tablespoons grated Parmesan cheese
• 2 eggs, poached (see below)
• 1 English muffin, toasted
• 2 slices avocado

Saute mushrooms, zucchini, red bell pepper and red onion in butter with a little olive oil; season with salt and pepper. Place one poached egg on each half of the toasted English muffin and cover with a sprinkling of Parmesan cheese. Top each poached egg with sauteed vegetables and avocado.

To poach eggs: In a large sauce pan, heat 3-4 cups of water until almost boiling. Add 1 tablespoon of vinegar to the water (vinegar helps the egg to maintain its shape). Crack each egg into a small dish and slide the individual egg into the water. You should be able to cook about 4 eggs at a time. Keep water just below a boil, reducing heat as needed, and cook until egg whites are set but centers are still soft.
