    Butterscotch Banana Bread

    Located in Atascadero, near San Luis Obispo, the Oak Hill Manor is a 6,000 square feet Tudor-style inn.

    The elegant inn has five suites, all with a fireplace and tub. The innkeeper adapted this delicious sweet bread from the Toll House Heritage Cookbook.



    • 2 cups mashed ripe banana (about 4-6 bananas)
    • 1 ½ cups sugar
    • 1 stick butter, melted
    • 2 large eggs
    • 3 ½ cups all-purpose flour
    • 4 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1 teaspoon salt
    • 1 teaspoon nutmeg

    Preheat oven to 350. In a large bowl, cream together bananas, sugar, butter and eggs. In a small bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Gradually add flour mixture alternately with milk to banana mixture, mixing well after each addition. Stir in 2 cups of pecans and butterscotch morsels.

    Divide batter between 2 greased and floured 9x5-inch loaf pans. Sprinkle with remaining 2/3 cup of pecans. Bake for 60-70 minutes, until a toothpick inserted in the center comes out clean. Cool bread in pans for 15 minutes then remove from pans to a wire rack.

    The crowds have dispersed and the weather is beautiful. Fall is the perfect time to visit our National & State Parks! Here's a spotlight on three more of California's great parks along with some nearby CABBI inns to enjoy recreation and relaxation.

    Yosemite National Park
    Yosemite National Park is best known for its waterfalls. Within its nearly 1,200 square miles, you can find deep valleys, grand meadows, ancient giant sequoias, a vast wilderness area, and much more.
