Makes 12 Muffins
2 eggs
½ cup sugar
½ cup butter, room temperature
¾ cup milk
1¹/₃ cups flour
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1½ cups coconut
½ cup chocolate chips
½ cup sliced almonds
Preheat oven to 350°F. In a large bowl, combine eggs, sugar, butter and milk. In a medium bowl, sift together flour, baking powder, baking soda and salt. Add flour mixture to egg mixture, mixing well until fully combined. Stir in coconut, chocolate chips and almonds. Line a muffin pan with muffin cups and scoop in dough – the cups should be about ⅔ filled. Sprinkle additional coconut over the top of each muffin. Bake for 20 minutes.
