Salsa Fresca for Oak Street Frittata

Ingridients:

6 Tomatoes – large dice
1 bunch Cilantro
2 Limes – juice
1 Ear Roasted Corn
1 Red Onion – medium dice
2 Jalapenos – seeded and diced
1/2 cup Orange Juice
1/2 bunch Green Onions

Directions:

  1. Blend Jalapenos, Garlic, Lime Juice and Orange Juice until pureed.
  2. Add in order – Tomatoes, Red Onion, Cilantro and Salt – blend until desired consistency.
  3. Fold in Green Onions and Corn. Adjust salt and acidity to taste.
