Castroville Eggs

Castroville, California is known as the ‘Artichoke Capital of the World.’ Marilyn Monroe was crowned Miss California Artichoke Queen in Castroville in 1947.

Ingredients

Servings: 8

Sauce:
4 cups cream or half & half
½ teaspoon salt
¼ teaspoon white pepper
¼ cup chopped green onions
¼ cup diced pimentos
2 teaspoons cornstarch diluted with 2 teaspoons water
1½ cups shredded cheese of choice, a white cheese is recommended
2½ cups chopped artichoke hearts, water-packed not marinated
4 English muffins, split and toasted
8 eggs
Hot water for poaching eggs Splash of vinegar

Directions

For sauce: Mix together all sauce ingredients in the top pan of a double boiler. Heat through and add cheese. Continue to heat until cheese has melted and add artichoke hearts. To serve: Poach eggs in water with a splash of vinegar to keep eggs from spreading. Place one egg on each half of English muffin. Ladle warm sauce over eggs. Garnish with edible flower, parsley or paprika.
