Southwestern Soufflé

Makes 1 Serving

1 flour tortilla, large snack size
2 eggs
¹/₃ cup shredded Colby cheese, plus additional for serving
1 teaspoon diced green chiles
Chopped fresh cilantro
Bacon bits
Sour cream, to serve
Salsa of choice, to serve
Black olives, to serve

Preheat oven to 350°F. Spray an individual sized round soufflé dish with non-stick cooking spray. Heat tortilla in the microwave for 30-40 seconds, until soft. Press tortilla into the bottom of the dish. In a small bowl, mix together eggs, ⅓ cup of cheese and green chiles. Beat mixture well and pour over tortilla. Place a generous handful of additional cheese on top and sprinkle with bacon bits and cilantro. Bake 35 minutes, until cheese is melted and edge of tortilla is browned. Serve with sour cream, salsa and black olives.
