French Toast, Pancakes and Waffles
Banana Nut Pancakes

Serves four

1 egg

1 1/4 cup buttermilk

2 tablespoons oil

1 1/4 cups flour

1 teaspoon sugar

3/4 teaspoon baking soda

1/2 teaspoon salt

1 ripe banana, mashed

3/4 cup chopped walnuts


Heat griddles (and oil, if necessary). Combine egg, buttermilk, oil and mashed banana in a medium bowl. Combine flour, sugar, baking soda and salt in a separate bowl. Mix dry ingredients into wet ingredients until just combined, then stir in nuts. Drop by 1/4 cupfuls onto hot griddle. Turn pancakes when bubbles begin to form on top and cook other side. Pancakes should be golden. Serve with Spiced Syrup - recipe follows
