Plum Coffee Cake


1 cup flou

1 tsp. baking powder

1/2 tsp kosher salt

1 cup sugar plus 1 Tablespoon

1 stick unsalted butter

2 eggs

10 plums, halved and pitted

2 tsp. fresh lemon juice

1 tsp ground cinnamon




Preheat oven to 350 degrees. 

Sift dry ingredients

In mixer, cream 1 cup sugar and butter in a large bowl until light in color. Add the dry ingredients and then the eggs.


Spoon the batter into an ungreased 9" springform pan. Cover the top of batter with plum halves, skin side up. Sprinke the remaining Tablespoon sugar and lemon juice.  Liberally sprinkle the cinnamon on top.

Bake until the cake is golden 45-50 minutes.  Cool on a rack then unmold. Sprinkle with powder sugar.  Best served warm. Expect compliments.
