French Toast, Pancakes and Waffles
Casa Bella Inn's German Apple Pancakes


6 eggs

3/4 cup unbleached flour

3/4 tsp baking powder

1 Tbsp + 1-1/2 tsp sugar

Pinch of salt

1-1/2 cup milk

1-1/2 tsp vanilla

3 Tbsp unsalted butter, melted

3/4 tsp ground nutmeg


Apple Filling

1/4 cup + 2 Tbsp unsalted butter

3/4 cup white sugar

3/4 tsp ground nutmeg

3/4 tsp ground cinnamon

1-1/2 tart apple, peeled, cored and sliced



· In a large bowl, prepare dough:   blend eggs, flour, baking powder, sugar and salt.  Gradually mix in milk, stir constantly.  Add vanilla, butter and nutmeg.  Let batter stand for 30 minutes or overnight.

· Preheat oven to 425° F

· Melt butter in 10” oven proof skillet, brushing along the sides of the pan.  In a small bowl, combine 1/2 cup sugar, cinnamon and nutmeg.  Sprinkle mixture over the butter.  Line pan with apple slices.  Sprinkle the remaining sugar over the apples.  Place the pan over medium-high heat until the mixture bubbles, then gently pour the dough batter over the apples.

· Bake in a preheated oven for 15 minutes.  Reduce heat to 375° F and bake for 10 more minutes.  Slide pancake onto serving platter and cut into wedges.

· Substitute skillet with muffin pan, follow the same   directions, apportioned for 12 individual servings.  Baking time may vary.


Yields 6 generous wedges or 12 individual muffin tin servings
