French Toast, Pancakes and Waffles
Baked Pancakes with Apple Topping

Makes 6 Servings

1½ chopped cooking apples
2 tablespoons butter
2 tablespoons cinnamon/sugar mixture
6 eggs
2 teaspoons vanilla extract
1 cup milk
1 cup flour
Sliced strawberries, to serve
Whipped cream, to serve
4 tablespoons chopped nuts, to serve
¼ cup maple syrup, to serve

Preheat oven to 400°F. While oven is heating, whisk eggs, vanilla extract and milk together in a medium bowl. Add flour and whisk for 30 seconds. Mixture will be lumpy. Spray 6 individual oval ramekins with non-stick cooking spray. Divide mixture evenly among the ramekins. Bake 20 minutes. While pancakes are baking, melt butter in a medium skillet, chop apples (leave skin on) and place them in the melted butter. Add cinnamon/sugar mixture to apples and stir until the apples are the consistency of an apple pie mixture. Heat maple syrup in the microwave for 30 seconds. Place pancakes on individual plates, divide the apple mixture among the pancakes and drizzle with syrup. Garnish with sliced strawberries, whipped cream and a sprinkle of nuts. Serve immediately with sausage or home fries.
