Scrumptious Stuffed Mushrooms

Makes 6 Servings

2 pounds button mushrooms
½ bunch thyme
½ cup chopped bacon
½ large yellow onion, diced
2 tablespoons extra virgin olive oil
1 tablespoon chopped garlic
¼ pint heavy cream
¹/₃ cup Asiago cheese
¾ cup breadcrumbs
1 egg
Truffle oil, optional

Preheat oven to 400°F. De-stem mushrooms. Dice half of the mushrooms and all of the stems. In a large sauté pan, heat oil over medium heat then add bacon and cool until all the fat has been rendered out. Add the diced mushrooms and cook for 10 minutes. Add onion to skillet and sauté until they are translucent. Add the garlic and thyme and cook for 1 minute before adding cream. Reduce liquid by half and remove from heat. Add the cheese, breadcrumbs and egg to the mixture. Stuff the remaining whole mushrooms with the mixture and bake about 20 minutes until soft. Drizzle with truffle oil to serve.
