Low-Fat Honey Apricot Bread

Makes 3 Loaves

1 tablespoon butter
1½ cups sugar
3 eggs
6 egg whites
1 cup milk
1½ cups honey
1½ teaspoons vanilla extract
5 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
2½ cups dried apricots, diced

Preheat oven to 350°F. Liberally spray 3 loaf pans with non-stick cooking spray. In a large bowl, cream together butter and sugar. Add beaten eggs and egg whites, milk, honey and vanilla to sugar mixture. Mix until well combined. In a medium bowl, mix together flour, baking powder and baking soda. Add flour mixture to sugar mixture, beat until smooth. Fold in diced apricots. Divide dough into 3 loaf pans and bake 45-60 minutes, or until a toothpick inserted in the middle comes out clean.
