Mitzi’s Quiche

Makes 8 Servings

1 unbaked 9-inch pie shell
4 eggs
1 cup heavy cream
¼ teaspoon sea salt
¼ teaspoon fresh ground pepper
¼ teaspoon nutmeg
¼ pound fresh baby spinach
½ pound white button mushrooms, lightly sautéed in butter
½ cup green onions, finely chopped
1 cup grated Swiss and Cheddar cheese mix

Preheat oven to 350°F. In a medium bowl, beat eggs, salt, pepper and nutmeg; fold in cream. Place spinach, mushrooms and green onion in the bottom of the pie shell; pour egg mixture over the top. Sprinkle with cheese and baked for 45 minutes, or until eggs are set.
