Poached Egg(s) Nested on Sundried Tomato Potatoes & Bacon

This elegantly simple dish is one of the most popular at the Beazley House.

Ingredients

Servings: Per Individual

One or Two Jumbo Eggs

1/2 Tbs Sundried Tomatoes

1 Yukon Gold Potato

Mrs. Dash Garlic & Herbs

Crumbled Feta Cheese

Cracked fresh pepper

Lean Bacon

Directions

  1. Parboil small Potato
  2. Slice Potato into 1/4 inch rounds
  3. Drain sundried tomatoes & herbs mix in with potatoes & saute until golden brown
  4. Place potatoes mixture on decorative plate & sprinkle with Feta Cheese
  5. Poach egg 5 minutes
  6. Nest egg on potatoes
  7. Garnish with edible flowers
  8. Place lean bacon on plate
