Makes 1 Pie
2 cups cottage cheese
Preheat oven to 350°F. In a large bowl, beat cottage cheese with an electric mixer on high speed for 1 minute. Add remaining ingredients and blend well. Pour into a 9-inch ceramic pie dish and bake for 50 minutes – until a knife inserted in the middle comes out dry. Refrigerate overnight. Serve chilled with a slice of fruit for garnish.
