Cheesy Apple Blossom Quiche
Makes 6 Servings
2 apples, diced
Preheat oven to 375°F. In a medium skillet, sauté apples and butter for 5 minutes. Layer apples in the bottom of the partially baked pie shell; top with cheddar cheese. In a medium bowl, beat together eggs, egg yolks, cottage cheese and half & half. Pour mixture over apples and cheese. Combine the sugar, cinnamon and salt and sprinkle over the top of the egg mixture. Bake in oven for 30-45 minutes or until firm.
