MJ's Veggie Benedict Scramble


Two Servings


Handful of spinach
1 medium zucchini, diced
1 English muffin, split
4 Eggs
1/2 cup hollandaise
thinly sliced scallions
1/2 avocado


Saute zucchini and spinach over medium heat until tender. Scramble eggs and add to pan. Cook to a medium/soft scramble. Meanwhile, toast English Muffin and place half on each plate. Divide egg mixture between muffins. Top with holandaise (either homemade or Knorr's has a terrific and easy version), scallions and sliced, fanned avocado.
