Fresh Corn Casserole
Makes 8 Servings
2 cups fresh or frozen corn
1 cup cream
1 large can diced green chilies
4 cups of chedar cheese
Place 12 cracked eggs in the blender, blend well. Pour into large bowl. Add cream, corn, chilies, and cheese. Mix throughly. Pour into an 8x12 pyrex dish or pour into 8 one cup ramikins. Place into an oven heated at 350 degrees and bake for 45 minutes to one hour. When serving you may offer guacamole or salsa on top of the serving.
