Coffee Cakes, Scones and Cereals
Tracy’s Special-Tea Granola
Servings: Makes approximately 15 cups of Granola
5 cups of rolled oats
1 cup each walnuts, sliced almonds, pistachios
1 1/2 cups shredded coconut
2 teaspoons loose-leaf vanilla tea, lightly ground
2 teaspoons loose-leaf cinnamon tea, lightly ground
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup canola oil
2/3 cup honey (plus more to drizzle)
1 1/2 cups dried cranberries
Heat oven to 350 degrees.
Spray two baking sheets with cooking spray.
Mix all dry ingredients together except for cranberries. Stir in canola oil and honey. Spread mixture on baking sheets in a single layer. Bake until golden, about 10 minutes. Flip granola over and drizzle with honey on top; bake for approximately another 10 minutes or until crunchy and golden brown all over. Remove from oven and stir in dried cranberries. Spread granola back onto baking sheets and pat down firmly with spatula.
Allow granola to cool completely, then break into chunks and store in an airtight container in a cool dry place.
Enjoy with yogurt or milk, or just straight from the jar! It is especially lovely when combined with fruit and yogurt for a beautiful and delicious breakfast fruit parfait.
